Good Morning and Happy Tuesday!!

With midterms and work, I have not posted in a while, but will start back today.  Yes I did say I am 59, but it was the right time to go back to school and I am loving it!!
So today's yummy post?

Gena’s Raw, Vegan Carrot and Cumin Wraps 
(vegan, gluten free, soy free if you sub sea salt for the tamari)

Makes 6 wraps
2 cups carrot pulp OR grated carrot (if you use the latter, give it a quick squeeze with paper towel to remove a little excess moisture)
1 cup flax meal
2 cups water (+ extra as needed)
1 tbsp cumin
1-2 tbsp tamari




1) Blend all ingredients in a high speed blender till very smooth. Add more water as needed; you want a pancake batter consistency. The moisture will vary depending on your pulp and how dry it is, so you may need to add a lot or only a little more. Use your kitchen intuition!

2) Spread wrap batter evenly onto two Teflex-lined dehydrator sheets. Dehydrate at 115 degrees for about 3 1/2 hours, or until the tops are firm and you can peel the wraps away from the nonstick sheets (if they’re a mess when you try to peel them off, keep dehydrating).


3) Flip your Teflex sheet (with the wrap on it) upside down onto the mesh sheet beneath, and carefully peel back the Teflex till the wrap has been flipped onto its other side. Continue dehydrating another 1 1/2 hours or so, checking in on the wraps every so often. You want them to ultimately be firm and sturdy, but still flexible, and you don’t want the edges to start cracking too much when you bend them (they’ll definitely crack a little no matter what you do).

4) When the wraps have finished dehydrating, you can use a pizza wheel or knife to cut them into 6 rectangles. You can also cut away some of the edges, if they’ve gotten very hard.

5) This is important: store these overnight in a plastic bag or airtight container. This will get rid of some of the brittleness that the wraps may have taken on in the dehydrating process. When you’re ready to use them, simply stuff them with fillings of choice, and get eating!
I chose sweet potato, avocado, red cabbage, greens, and a bit of my red pepper, chickpea, and tahini dressing.

Yummy Vanilla Cheesecake Filled Brownie

Vanilla Cheesecake Filled Brownie
 
serves 4-6
Brownie:
2 cups dates
1/2 cup oats
3 tablespoons cacao

Blend together all ingredients in your blender. Remove from blender and press into a bowl shape leaving a bit extra for a “lid” to the brownie. You can press out into a pan/bowl if that is easier for you. I didn’t do that so I can’t specify a certain sized dish, just make sure to line it with parchment paper. Set aside.
Vanilla Cashew Cheesecake:
1 cup cashews, soaked
3/4 cup water
Juice from 1 lemon
Pinch of himalayan salt
Drop of vanilla

Blend together all ingredients until smooth. Pour cashew cream into brownie bowl. You will have extra. Place in freezer to set up for 2 hours. Remove from freezer and put brownie “lid” on top. Pressing around the sides to secure it.
Toppings:
4 large strawberries
Chocolate bar of choice, I used this
Left over cashew cheesecake

Cut up strawberries. Melt chocolate. Coat strawberries in the chocolate. Top brownie with chocolate covered strawberries. Drizzle extra chocolate and cashew cheesecake on top of strawberries, if desired. Serve, enjoy!

It's the Weekend - or Close Enough :-)

What's For Dinner

Creamy Vegan Avocado Pasta

Mmm, this vegan avocado sauce is divine! Gorgeously thick and creamy with garlic flavor and a bit of lemon sourness! Oh boy, I swear I could eat it every singe day! And the best part, it takes only 15 minutes to make.

  • spaghetti14 oz/400 g
  • very ripe avocados2
  • lemon1
  • garlic4 cloves
  • olive oil4 tbsp
  • basil6 stems
  • salt1.5 tsp
  • pepper1/2 tsp


  1. First, fill a large pot with water and place over high heat. Bring water to a boil, add pasta, reduce heat and cook according to the package instructions. Drain.
  2. Meanwhile, make the sauce. Peel and pit the avocado, cut it roughly, put into blender and process.
  3. Then add the juice of one lemon, 4 cloves garlic, basil leaves, 4 tablespoons of olive oil, 1.5 teaspoon of salt and 1/2 teaspoonn of pepper. Blend until perfectly smooth.
  4. Combine sauce and pasta and serve immediately. Be aware, that avocado sauce is not recommended to heat.
