Creamy Vegan Avocado Pasta
Mmm, this vegan avocado sauce is divine! Gorgeously thick and creamy with garlic flavor and a bit of lemon sourness! Oh boy, I swear I could eat it every singe day! And the best part, it takes only 15 minutes to make.

- spaghetti14 oz/400 g
- very ripe avocados2
- lemon1
- garlic4 cloves
- olive oil4 tbsp
- basil6 stems
- salt1.5 tsp
- pepper1/2 tsp
- First, fill a large pot with water and place over high heat. Bring water to a boil, add pasta, reduce heat and cook according to the package instructions. Drain.
- Meanwhile, make the sauce. Peel and pit the avocado, cut it roughly, put into blender and process.
- Then add the juice of one lemon, 4 cloves garlic, basil leaves, 4 tablespoons of olive oil, 1.5 teaspoon of salt and 1/2 teaspoonn of pepper. Blend until perfectly smooth.
- Combine sauce and pasta and serve immediately. Be aware, that avocado sauce is not recommended to heat.
