Breakfast? Lunch? Snack? Dinner? Dessert? With ingredients this healthy and filling, I do believe you can have it whenever you’d like! This amazing recipe comes to us from the lovely Rebecca Kane, Uncooking101 teacher, overall fabulous person to know, and creator of the Shining Raw Kitchen.
EQUIPMENT: Blender or food processor
APPLE MIXTURE INGREDIENTS
4 apples
1/2 cup raisins
Juice of 1/2 lemon
1 tsp vanilla extract
1 tsp cinnamon
CRUMBLE INGREDIENTS
8 medjool dates
3 Tbsp water
1/4 cup oats
1/4 cup chopped walnuts
2 Tbsp pumpkin seeds
CUSTARD INGREDIENTS
1 ripe banana (A mango would work well too)
1/4 cup Brazil nuts or cashews
1/4 tsp turmeric powder (for color)
1 Tbsp of water (as needed to turn)
INSTRUCTIONS
For the Apple Mixture
1/ Chop two of the apples into small pieces and put to the side.
2/ Place all of the other ingredients in a food processor or blender, and combine until you have a good consistency – think apple sauce…
3/ Stir in the chopped apples to the apple sauce.
For the Crumble
1/ Blend the water and dates, until you have a thick date paste.
2/ Place in a bowl.
3/ Stir the rest of the ingredients into the date paste until well combined.
For the Custard
Blend all the ingredients together until smooth and creamy.
ASSEMBLY
1/ Place a layer of the apple mixture in to a dish or serving bowls.
2/ Layer with the crumble.
3/ Add the custard and enjoy!
SHINING TIPS
If you would like warm custard, make the custard with warm water
If you have a dehydrator, warm through the crumble
